Quinoa Tots


Quinoa Tots Served with Creamy Tomato Soup
INGREDIENTS:
1 1/4c   Quinoa, cooked and cooled
1c         Beans, mashed (white or chickpea)
1/4c      Parmesan Cheese, grated
1/4c      Onion, grated (or minced)
2 tbsp   Chickpea Flour (or coconut flour)
1 tbsp   Seasoning of your choice: chili powder, garlic powder, salt & pepper

DIRECTIONS:
Pulse (or mix by hand) beans, cheese, onion, seasonings and flour until mixed well and sticky. Mix in quinoa by hand. Form into balls and form into tots (or any shape you like really). Makes approximately 18-20.

These can be baked or fried in oil or baked. If you do bake them, just very lightly coat or mist with oil first or they can seem dry. Feel free to make a massive batch and then freeze for future quick lunches.
