This summer wasn't quite as adventurous as we might normally hope for (having a wee baby to pack along is tough at times) but here is a little photo journal of our favorite times.<br />

The Caves are more like Glacial Crevasses, either way, the children had a blast exploring the lush, moss covered rock openings. Climbing and squeezing into the dark unknown. We didn't get nearly enough camping in for my liking, but we were blessed to enjoy the last weekend of the season at Pioneer Bay Campground, Clearwater Lake, The Pas, MB. Thanks to a wonderful friend we were blessed to the use of their seasonal site and camper. It was a cool drizzly evening that didn't slow any of us down. Just light up the fire and watch the older children run around "hunting moose" with their handcrafted spears. Staying up late to hide out in the dark, howling to find one another. Since we are a family who LOVES the re-gift, you can only imagine how we might feel about "goodie bags". We are always open to new ideas to thank our wonderful guests for coming without sending them home with heaps of sugar laden treats or highly fragile dollar store toys. We love our friends and want to honor them without breaking the bank.<br />
<br />
Here is one of our ideas. Re-melting crayons into new, cute shaped molds. Unless you know it can be baked, I recommend melting in a pot on the stove (found out the hard way).<br />

Here's a neat idea, re-use your empty glue stick containers and pour in melted crayon wax. Great for toddlers.<br />

We had owl and flower shaped ice cube trays (not oven friendly) and Lego shaped (oven safe) molds. We also have one of those Crayola Crayon Makers (a gift) that is a neat idea, but a slow going process, but it comes with a crayon shaped mold that is easy enough to use on its own.<br />
<br />
For added special-ness (a word only used by the sweetest of little girls) we added a few drops of Essential Oils so the user can enjoy the fragrance while they doodle.<br />
<br />We plan to make copies of some doodle pages, buntings made by my friend over at <a href="http://theangryturtle.blogspot.ca/2015/05/checking-in.html">www.theAngryTurtle.blogspot.ca</a> and some home made cookies to go in our gift bags. What are some of your favorite "goodie bag" ideas?<br />

At 40 yrs old it's strange and wished I knew about this in my younger years while we were trying so hard to conceive with my messed up cycle, but we have a full blessed house anyway, just took us longer than others. VERY IMPORTANT: I would NOT ingest just any essential oil. It's vitally important to ensure your oils are really PURE because labeling laws do not prohibit companies from saying their oils are "Pure", when in fact they only contain the minimum 5% Pure oil & the remaining 95% can be pretty much anything else. I KNOW that Young Living oils are 100% pure and MANY of their ingestible oils are labeled with supplement facts on their bottles. I can KNOW where they harvest their products and that they are pure from seed to seal because they tell you where they are farmed and that they are independently tested for potency & purity. That's a guarantee I can trust. Make sure you can trust yours as well. Essential oils are powerful and should be treated as such.<br />

<span style="font-size: x-small;">*Many of these oils I blend or layer together for combined power. With 5 young children I find my tired body needs a little more help with my various aches & pains. My life has a go and a go faster mode until my mind & body says STOP! I keep hoping this season is short, yet I long for this last baby to slow down ans stay small a weee bit longer.</span><br />

So there you have it! My list of go to oils. About 6-8 of these are daily family use, while others are more occasional, but each one holds more value than the price tag it carries. Truthfully my most used oils are usually in the $10-$25 range and they last a good long while.<br />

4 c almond flour<br />2 c quinoa flour<br />¼ c ground flax<br />1 tbsp golden flax seed<br />½ c unsweetened coconut<br />3 tsp baking soda (alum. free)<br />3 tsp baking powder<br />1 tsp sea salt<br />6 previously frozen, thawed bananas<br />6 eggs<br />¼ c xylitol (or other sweetener)<br />½ c coconut oil, melted<br />2 tsp cinnamon (1 drop cinnamon essential oil)<br />slivered almonds for garnish<br />

<span style="color: #0b5394;"><span style="font-size: large;">Directions:</span></span> Mix all wet ingredients in a large bowl. Combine dry ingredients and mix well with wet ingredients. Fill cupcake liners with 1 scoop or 1/4 c. Bake at 350˚F for 18-20 minutes. Makes 30 muffins.<br />

Store in fridge and use within 7-10 days. These freeze well.<br />

Using oils in the kitchen has become one of my greatest pleasures. I love fresh flavors and will grow as much as I can myself, but during our long winter months here in Northern Manitoba, Canada, I often run out of my favorite herbs and veggies. The great thing about oils is that a little goes a very long way; they won't go bad or die if I forget to water them.<br />

oil - thereby watering down the essential oil - but then still sell the
'watered down' oil as 100% pure essential oil. NOTE: to legally label an oil as 100% PURE, it's only required to contain 5% of a 100% pure oil.</span></span><br />

<b><span style="font-family: inherit;"><span style="font-size: small;">Aromatic Application:</span></span></b></div>
<span style="font-family: inherit;"><span style="font-size: small;">1. Inhale the oil directly from the bottle, rub a drop or two on your hands and cup your nose. </span></span><br />
<span style="font-family: inherit;"><span style="font-size: small;">2. Diffuse the oils with a diffuser which disperses the oils in a
micro-fine vapor throughout the air. A diffuser does not heat the oils
which can damage their therapeutic properties.</span></span><br />
<span style="font-family: inherit;"><span style="font-size: small;">3. Breathe in steamy vapors deeply by carefully pouring hot water into a
glass bowl, adding in a couple drops of essential oils, and covering

1lb sausage (your favorite, italian works nicely)<br />
1 large onion, chopped<br />
3-6 cloves of garlic (to your garlic taste) <br />
8 cups water (or mild chicken stock if your sausage was bland)<br />
4-5 parsnips, peeled and sliced<br />
1 bunch of kale, ribs removed, roughly chopped<br />
1/2 c heavy cream (opt)<br />
2 tbsp butter (opt)<br />

Cook up your favorite sausage, we often use ground pork and add the anise, chili paste, garlic, and other italian-style seasonings, but one could easily use the store bought, removed from casings. <br />
<br />
Add onions and garlic and saute until soft. Add water (or broth) and the parsnips. At this point we have also added white beans if you like or have on hand, but it's not critical. Once parsnips are softened you can add in the kale. It only takes 5-10 minutes to soften up the kale, but like many other soups, the longer you leave it to simmer the tastier it gets. We like to finish it off with a bit of cream and butter, especially if the sausage is spicy. Add parmesan for a real yummy finish.<br />

The base for the <span style="color: #660000;"><span style="font-size: large;">Italian "Wedding" Soup</span></span> is much the same really, only instead you make pork meatballs, cook those and add the onions, garlic (you can skip the parsnip but we like it). Instead of orzo pasta, we often ad a handful of quinoa. If you can't find kale, try using the greens from swiss chard. It is a bit more sour n flavor, but oh so good for you.<br />
<span style="color: #660000;"><span style="font-size: large;"><br /></span></span>
<span style="color: #660000;"><span style="font-size: large;">Sausage, Tomato, Bean soup</span></span> is another quick throw in everything soup. We start with the basics you see above and then add a can of tomato paste (canned tomatoes or whatever you have on hand). We've added zucchini and fresh herbs when they are in season.<br />

Now, <span style="color: #660000;"><span style="font-size: large;">Thai and Curry Soups</span></span> are often based very similar. Staring with your chicken stock, onions, garlic. You layer in the other flavors, tasting to your preference as you go. So many people (myself included) can get intimidated by the varieties of spices out there. Thai, uses green curry paste, but a nice spicy red is just as popular; the key, I find, is the addition of coconut milk and an acid like lime or lemon (or lemon grass). I recently purchased some lemongrass powder at the asian food market on our last trip south and I've been enjoying playing with it's tart, yet sweet, woody flavor for marinades, dips and yes, even soup.<br />
<br />
I am NOT a fan of cooked peppers in my soup so I often julienne them and add to my bowl right before serving, along with bean sprouts and fresh thai basil (it does have a distinct flavor, but regular basil or cilantro will also work in a pinch). Best thing you can do is visit those small thai restaurants in your area. Most of the time they are more than willing to throw together some great dishes for you. Just tell them what you like (or don't) and your heat tollerance and maybe go out during the week to make sure they aren't super busy. We loved going to <a href="https://plus.google.com/112907432355253294542/about?gl=ca&hl=en" target="_blank">Magic Thailand</a>, <a href="https://plus.google.com/106013959434519293585/about?gl=ca&hl=en" target="_blank">Baie D'Ha Long Bay</a> and most of all we had the best prices and greatest meal (custom made for our no sugar or grains diet) at <span style="color: #660000;"><a href="https://www.skipthedishes.ca/lao-thai" target="_blank"><span style="font-size: large;">Lao Thai!</span></a></span> They put together an awesome selection and we only paid $40 for the two of us. We love this place and we're super sad we only discovered it a few months before moving up north. I think that would have been our regular date spot for sure.<br />

My bad habits formed since childhood felt impossible to change. Obviously the fast food was cut out first because we all know that stuff is no good. Like so many others, I joined a gym to get that cardio and weight training in that I wasn't getting from behind my computer at work. These times in my life were also very stressful mentally and spiritually. I was eating to comfort myself and build up walls to protect myself emotionally. In short, I was doing exactly what I vowed as a youth to NEVER do and didn't even know it. I was destroying my body's ability to stay healthy and create the need for one of those "diet" plans.</div>

At 22 years old I was 145 lbs (not huge I know, but a gain of 40 unhealthy lbs in only 3 years is not good). After a visit from my doctor (who always knows best right?) I was advised to cut out fat and count calories, staying under 1500 calories a day. This was back when Oprah and Bob Greene were all the rage and I figured that if the doctors approve their plan than it's not a "diet" right? So I rationalized my way into a diet program. I kept a journal back then and to read it now just makes me shake my head. The stuff I thought was healthy was clearly going to kill me. But at the risk of sounding cliché, I'll quote a classic Dr. Phil-ism <span style="font-size: x-large;"><span style="color: #741b47;"><i>"When you know better, </i></span></span><br />

The good thing about this journal is that I was accountable to eat better and exercise and it showed me my bad habits so I could work on them. Nearly two years later I was eating better; no more skipped breakfasts, more veggies and fewer processed foods but I was weighing in at 165 lbs. How could this be? I was doing exactly what the doctor & Oprah were telling me to do; counting calories, reducing fat and cardio daily! Fast forward two more years on that same, impossible program and I was 174 lbs... one more year 180 lbs but changed I changed the plan to consuming only 1200 calories, 33g fat, 50g protein and 175g carbs per day and working out cardio 1hr 5x per week (more like Weight Watchers). Then I stopped journaling... No wonder! I would go on to gain another 6 lbs tipping the scale at 186 lbs and only 26 years old. Clearly this was not working and not for lack of trying. I bet this resonates with the majority of people out there as I've heard this story myself so many times over the years.</div>

A HUGE wake up call for me was when my doctor told me that I was on the cusp of having to take high blood pressure pills and if I kept this weight gain up I was going to die very young. I thought, <span style="font-size: small;">What is going on here? This is not who I am!</span> At this time in my life the stress was reaching it's breaking point as well, something needed to change and FAST. Inside I was fighting this battle over who I really was and how do I change my life to make it better. I knew the answer needed to start in my head and in my heart or I would have no hope at all. I knew from my youth that the only lasting changes are made when God is your strength and guiding force but <span style="font-size: x-large;"><span style="color: #134f5c;"><i>"How could God possibly fix the mess I was in?". </i></span></span></div>

It started with me sucking it up and going back to church, being around other people are also working toward that same goal and getting into the habit of praying and letting him change my hard, hurting heart and make His plan my priority. I focused on healing at the core of where the problem began. Why was I so stressed? This process (something I might share at another time) happened very, very quickly for me and when change happens that quickly you've got to know it's going to be painful and it was devastating at first, but then I felt peace for the first time on over 7 years. Real peace! In turn I lost 30 lbs in a month, gained confidence in who I was and motivation to live better. I am not going to fool you, most of the weight loss was due to not eating regular meals due to stress and the business of piecing life back together. Most of the time, I was just not at all hungry! Beyond that, something had shifted in my heart and I was able to see food as fuel for the first time in my life. No more calorie and fat gram counting... just don't eat food that wasn't real food (no processed stuff). I continued to lose a bit more and had the energy and drive to work out again (all this within 2 months, like I said for me things happen FAST). This time I joined a Kick Boxing Gym rather than an aerobic style program. I enjoyed getting rid of that stress kicking rather than eating and my body thanked me for it by dropping down to 145 lbs, increased energy and more importantly hope. Ironically this was the starting weight of my initial battle; now I had a "clean slate" and that's exactly what it felt like inside and out.</div>

15 years after the start of my healthy life journey and 3 babies later, I am weighing in at 142 lbs (nice to be healthier at 38 than when I was 22). My road to educate myself about food has taught me that, if I misused it, my body will get sick. The bottom line is: grains and sugar cause inflammation and fat cells to be stored in my body. Healthy fat, from natural sources, is my friend now; it helps to fuel my body to care for our 4 children, husband and new puppy. Is it a "diet"? Some might think that chasing after 4 young children would be enough exercise for me, but the reality is I am still not moving my body enough to keep it as healthy as I can. I prefer to join a sport or activity rather than a work-out routine but for right now, where we live I'm gonna have to suck it up, again. Since my cousin began her work-outs I thought I might be able to do those and hopefully encourage her to keep going at the same time (I have the feeling she'll encourage me more). She has Jillian Micheal's Ripped in 30 and Turbo Jam going on so I'll try those out, though it comes back to carving out the time and making health a higher priority. I also have some Tracy Anderson Dance workouts I found on You Tube. Add to that the walks to & from School with our foster son and the dog and we'll see how much more I can conquer. It's my job to take care of my body the best way I can, not the health care system. There are no guarantees in this life but at least I know I can look back and say I did my best.</div>

Since pie making, traditional or SFGF, is a time consuming task it rarely gets to the top of my "to do" list. This is why I knew that my Dad (who is following a very strict SFGF lifestyle) would really appreciate this labor of love. This crust recipe can be used for nay number of single layered pies. It is sweet, with a slight coconut flavor.<br />

<span style="font-size: large;"><span style="color: #134f5c;">Crust:</span></span> <i>(makes 2 thin crusts)</i><br />
3/4 cup coconut flour½ cup coconut oil<br />
½ cup unsweetened shredded coconut<br />
2 eggs<br />
¼ tsp sea salt<br />
<br />
1) Preheat oven to 375˚F<br />
2) Pulse the coconut flour, shredded coconut and salt in food processor until well combined.<br />
3) Add the eggs and coconut oil and continue to pulse until a dough ball forms (can be refrigerated and prepared later if you prefer).<br />
4) Divide dough into two parts. Place mixture into pie plate and work it evenly up the sides and bottom of the dish.<br />
5) Using a fork, pierce holes in the bottom of the crust.<br />
6) Bake for 15-20 minutes or until lightly golden. Cool completely before filling.<br />
<br />
At this point you can make a whole bunch and freeze them for future use.<br />
<br />
<span style="color: #134f5c;"><span style="font-size: large;">Chocolate Coating:</span></span> <i>(makes 1 pie)</i><br />
8 oz unsweetened chocolate<br />
1 tbs + 1 tsp heavy cream (or butter) <br />
2 tsp xylitol (or to your taste)<br />
<br />
1) Melt the chocolate small saucepan, over low heat.<br />
2) Add heavy cream and xylitol. Mix to combine, stirring constantly.<br />
3) Spread chocolate mixture over the crust and refrigerate until dried or while you're making the filling.<br />
<br />
<span style="color: #134f5c;"><span style="font-size: large;">Coconut Cream Filling:</span></span> <i>(makes 1 pie)</i><br />
1 can full fat coconut milk (light won't work)<br />
1 large egg<br />
3 Tbsp arrowroot powder<br />
3 Tbsp xylitol<br />
½ tsp vanilla extract<br />
½ cup shredded coconut, unsweetened<br />
⅛ sea salt <br />
<br />
1) Combine the coconut milk, egg, arrowroot powder, sweetener and salt in a saucepan. Bring the mixture to a boil, stirring constantly until it thickens. This can take a little while but make sure it thickens well.<br />
2) Stir in the shredded coconut and vanilla extract.<br />
3) Pour the filling over the cooled crust and chocolate refrigerate for about 4 hours or until the coconut layer is firm.<br />
4) Top with Whipped Cream lightly sweetened with your favorite sweetener. We like to use a tiny bit of maple syrup and keep any remainder for our morning coffees.<br />
5) Add to that some lightly toasted coconut and enjoy!<br />

This is the kind of pie one can have for breakfast and not feel the least bit guilty about it! <br />

As a child it was a great big cabin style tent with a room divider. As a youth it was a more light-weight tent designed for housing a few of us girls and it had to be light enough to be carried with a canoe and all our food over at least one portage. As a young married woman, my husband and I started out with a simple pop-up style tent that we most likely borrowed from someone. After we had a child we began to search out a tent to keep us a bit more comfortable. We saw it as a bit of an investment, but the modernized cabin style tent had features like a screened in gazebo, divided room and a ceiling light with remote control; handy when you're camping among many other tents so you can find your own or if need a nightlight for your child!<br />
<br />
Now, nearly 11 years into our marriage and 4 children later we need another upgrade. The search for our next upgrade took nearly 3 years but we were finally faced with a deal no-one could refuse. We found a 1977 Bonair Tent Trailer with two double beds, fridge, stove, heater, table and side bench/bed. She needs a bit of TLC but we think we can make it work.<br />

We took her on our first trip this summer with only a few minor repairs before taking off. Bearings, roof sealing and repairing some corners where the wood was exposed. We stayed comfortable, warm and most of all dry (only one leak, but minor). No more packing up a wet tent! That was worth it big time. So here are our before photos. In the past we have gone with boxed sets of homeschooling curriculum from <a href="http://www.aophomeschooling.com/" target="_blank">Alpha Omega Publications</a>, using both Horizons and Life Pac. They have worked well for us and our sone but we found something lacking in our home this past year - that personal, passion for learning that homeschooling is meant to create and encourage. Academically, our son is right up to par compared to traditionally schooled children, but he just doesn't LOVE learning as when we first began. For that reason and the fact that we have two five-year-olds and an eager soon-to-be three year old to teach, we needed to bring that passion for learning back to the front of the class. I have included many (if not all) my links from my research as we go along.<br />
<br />
After much research (it was a long winter) and encouragement from other homeschooling parents we know, we decided to use the <a href="http://en.wikipedia.org/wiki/Charlotte_Mason" target="_blank">Charlotte Mason</a> approach to educating our children. The basic premise is simple; people learn best when they are passionate about the subject or from those who are passionate about their subject. She encouraged learning from what she called "living books" rather than text books. Living books are most often written by people who are well informed and passionate about their subject and that will come across in their writing therefor, better capturing the attention and passions of your own child (better than any stagnant text book written by a panel of learned people might). We also really like that every part of a child's day becomes their learning. From habit training (or chores as some might call it) to character development to History and Math; all are just an extension of the parent's job to raise up passionate, functioning, educated, adults.<br />
<br />
You'll notice that I give about 15-30 minutes per subject. I want to be clear that not all the time will be used for reading/teaching. Some will be left open for discussion and having the children recite back to me the things they have learned so I know where to focus our attention the next time. I'm sure I am missing a lot of details that could help explain how our day will look, but in the end, our whole day is designed to keep our minds active and creatively learning .<br />

Here is what we hope to use as our "Curriculum" and schedule for this year... I'm certain things will adjust and change, but we need to start somewhere...<br />

For the Family Lessons, the initial teaching will be done together on these subjects though the younger children will use more simplified versions than the older one(s). We’ll discuss what we have learned using Who, What, Where, When, Why and How questions. The older one(s) will write out their questions and answers in a notebook and review with me their insights.<br />
<br />
While me might have started with <a href="http://simplycharlottemason.com/" target="_blank">Simply Charlotte Mason</a>, We ended up using the <a href="http://www.amblesideonline.org/WhatIsCM.shtml" target="_blank">Ambleside Online</a> site to help us pick out and organize our year. Both are great, but ultimately we liked the organization used on the Ambleside Online's website and we just needed to tweak is slightly to suit our needs. So not all of these subjects would be found on their site. One of the reasons for that is because Ambleside is a primarily British/American source and there really isn't a Charlotte Mason "approved" Canadian History base just yet. So I have looked up something that I think will be good for our needs and hopefully we'll be able to find most of our books at our local library. See the last image for that outline.<br />
<br />
We also wanted to use the Year 2 Bible to start so that we could begin our timeline as a family and the younger children could better follow along (hopefully). We've also decided to use the <a href="http://www.amazon.com/s?ie=UTF8&x=7&ref_=nb_sb_noss&y=25&field-keywords=Jeannie%20Fulbright&url=search-alias%3Dstripbooks&_encoding=UTF8&tag=thecomroo-20&linkCode=ur2&camp=1789&creative=390957" target="_blank">Exploring Creation Series</a> they sited as an alternative because I know my boys would prefer that brightly illustrated and factual style of learning for that subject. I don't know about you but some of my favorite fact books were those done by <a href="http://www.crabtreebooks.com/Store/item_detail.aspx?ItemCode=5148" target="_blank">Crabtree Publishing</a>, these are similar to those and a bit more text book like than I think Charlotte might have preferred.<br />
<br />
Math is also one that really can't just be done as a multi-age, but it can be done at the same time, only making simple changes for the young ones for now. We chose <a href="http://www.mathusee.ca/default.php?cPath=1_17" target="_blank">Math-U-Se</a>e for our son this year. He used to love math but recently began to dislike the many pages of question & answer work he had to do. This curriculum set seems to work past that and engage the children into loving math.<br />

With so many varieties, shapes and sizes the possibilities are endless really. But you might be asking yourself what to do with them? Here I have shared some of my own favorites and some links to my tried and true loves.<br />

<li>Cut squash in half and scrape out seeds.</li>
<li>Place cut side up in roaster with enough water to cover bottom of the pan and cover. </li>
<li>Roast for 45-50 minutes or until tender when poked with a fork.</li>
<li>Cool slightly, break apart fibers with a fork to look like spaghetti strings.</li>
</ol>
Top with your favorite meat sauce and your meal is complete. Our children loved this one and could easily make it once a week.<br />

You can pretty much top this with anything.<br />

We have done butter chicken or this <a href="http://www.bettycrocker.com/recipes/slow-cooker-thai-chicken/b8ad2965-9db0-48a1-af90-97341e6231fc" target="_blank">Thai Peanut Chicken recipe</a> I've memorized and adapted over the years and is now a favorite for the whole family.If you'd put it on regular spaghetti then you could certainly put it on this garden favorite.<br />

Once cooked these have a similar sweet flavor and have interchanged them in more than one recipe over the years. My favorite is from Health-Bent's site and have made it so many times that I bet the recipe has morphed into something else altogether. A classic squash <a href="http://www.health-bent.com/beef/paleo-butternut-squash-lasagna" target="_blank">Lasagna</a>.<br />

How about a simple one dish skillet dinner? This one has limitless possibilities, but this is the usual combination for us.<br />
<br />
Sausage (any you like)<br />
Acorn Squash (butternut or sweet potato)<br />
Onion, chopped<br />
Peppers, chopped<br />
Spinach<br />
Eggs <br />
Cheese, grated<br />
Avocado, chopped<br />

Remove sausage from the pan and let cool slightly. Add squash and enough liquid (water) to help cook the squash. Cut sausage into bite sized pieces and return to pan with any juices. Add peppers and cook until squash is almost done. Add spinach and make little "nests" in the mixture to break the eggs into. Finish cooking with lid on or in the oven. Top with cheese and avocado. We like to add hot sauce to our plates. Breakfast, lunch or supper, this one is a hit with everyone.<br />

Having been commissioned to make a grain-free version of this classic cake, I set out to find a recipe that, to the "untrained" or non grain-free tongue, would taste just as great as the traditional recipes. Here are the two versions I tried. Both were tasty but one did rise to the top. Try them for yourself and tell me what you think.<br />
<br />
<span style="color: #e69138;"><span style="font-size: x-large;">Carrot Cake I</span></span><br />
<br />
6 eggs, separated<br />
1/4 cup honey (or xylitol)<br />
1 1/2 cups carrots, cooked and cooled<br />
1 Tbsp grated orange rind (1 orange)<br />
1 Tbsp fresh orange juice (1 orange)<br />
1 tsp grated ginger<br />
1 tsp cinnamon<br />
3 cups almond flour<br />
<br />
1) Preheat oven to 325° F.<br />
2) Grease pan (or use silicone pan)<br />
3) Separate the eggs and beat the yolks and honey (xylitol) together. <br />
4) Mix in carrot, orange rind, orange juice, ginger, cinnamon and almond flour. <br />
5) Beat the egg whites until the form stiff peaks and fold into mixture.<br />
6) Spoon the mix into the pan(s). I used 2-9" pans and split the batter evenly to make layers and add more flavor with the cream cheese frosting in the middle. <br />
7) Bake for about 30 minutes or until a toothpick inserted into the center of the cake comes out clean. <br />
8) Cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely.<br />

<span style="color: #783f04;"><span style="font-size: x-large;">Carrot Cake II</span></span> <span style="color: #990000;"><span style="font-size: large;">(the winner!)</span></span><br />

1 cup honey (or 1/2 cup xylitol)<br />
1 cup butter<br />
12 eggs<br />
1 Tbs. vanilla extract<br />
1 1/8 cup coconut flour<br />
1/2 tsp sea salt<br />
1/2 tsp baking soda<br />
3 tsp ground cinnamon<br />
1/2 tsp nutmeg, grated<br />
1/2 tsp ginger, grated<br />
3 cups shredded carrots (about 6 medium)<br />
<br />
1) Heat oven to 350˚F. <br />
2) Grease 2-9"pans (or use silicone pans)*<br />
3) Melt honey and butter in a small saucepan over low heat. Cool. <br />
4) Lightly beat eggs. Add vanilla and blend. <br />
5) Add coconut flour, sea salt, baking soda, cinnamon, ginger and nutmeg, and beat until well blended, scraping down sides as necessary. Add shredded carrots, and stir lightly to incorporate.<br />
6) Pour into prepared pans and bake 25-35 minutes until a toothpick inserted in the middle comes out clean. <br />
7) Allow to cool completely and invert onto cooling rack.<br />

<span style="font-family: Verdana,sans-serif;">1. Preheat oven to 350F. Line a muffin pan with paper liners. </span><br />
<span style="font-family: Verdana,sans-serif;">2. Melt chocolate, coconut oil and xylitol together in a small saucepan over low heat on the stove, stirring constantly until xylitol is well mixed in (tasting to make sure sweetness is to your liking). Let cool several minutes.</span><br />
<span style="font-family: Verdana,sans-serif;">3. Place eggs, vanilla, and salt in a blender/mixer. Blend briefly to beat the eggs. Add a small amount of the chocolate mixture and pulse again to temper the eggs. Then add the rest of the chocolate mixture and beat together for 30 seconds.</span><br />
<span style="font-family: Verdana,sans-serif;">4. Add the cocoa powder, coconut flour and baking soda. Blend to combine (about 30 seconds). Let the batter sit for 2-3 minutes to thicken.</span><br />
<span style="font-family: Verdana,sans-serif;">5. Pour the batter into the prepared muffin pan to about ¾ full. Bake for 17-18 minutes.</span><br />
<span style="font-family: Verdana,sans-serif;">6. Carefully remove from muffin pan promptly upon removing from the oven. Let cool to room temperature before frosting.</span><br />

My greatest passion is healthy, sugar-free, grain-free (or low carb) cooking. However, I do enjoy creating customized birthday cakes. Over the years I have done them for my children's birthdays and that was plenty enough for me. Since moving to a more remote northern community where selection is slim at best I decided, with much encouragement from friends and family, to offer my services to others in the community. There are a number of skilled "home bakers" and at least one VERY talented professional baker (<a href="https://www.facebook.com/pages/Abbys-Cakes/152355618189897" target="_blank">Abby's Cakes</a>) in our small town so I figured I'd give it a shot. If people were willing to pay a little bit for my humble creations, then why not try? Here are some of these creations. I used too much oil on my hands to keep the fondant from sticking and it made the fondant not only shiny, but it just didn't get that smooth look. Now, the only time I use oil (or even water) with fondant is if the look we want is shiny (to look like plastic or something) and only to rub it on AFTER.</div>

She had a Alice in Wonderland theme going on. The Cheshire Cat with the striped fondant turned out very well, though I would have preferred more contrast in the color of the base to the cat and stripes. Tinting can be a tricky business! The client had made a black hat to sit on top and a teapot on top of that still. I looked wonderful and they were all so pleased. Felt really good for my very first SOLD cake. Along with this order were some very custom cupcakes. She loved the ones I showed her from a birthday gift I had made for a dear friend from <a href="http://theangryturtle.blogspot.ca/2012/05/birthday-check-in.html" target="_blank">The Angry Turtle</a>.<br />

I do not advertise more than the little bit on our local Facebook pages because I am not sure how busy I really want to get at this point. My prices are based on how long I think it will take to make plus the cost of materials. Being that I am not yet as proficient as a long time baker I keep my prices pretty reasonable ($10/hr at the beginning). As I do more and get better I will feel more comfortable charging more ($12/hr after more practice). I just can't see most people from our community spending hundreds of dollars on a birthday cake. Certainly, there are people out there who are willing, but I feel that this is less about making money and more about seeing people excited about their cake! The last few weeks feel like a bit of a gong show for me in the meal
department and for this self proclaimed foodie to say she isn't inspired to
cook, well, let's just say I'm in a funk. My family ate cereal for

There is so much talk about monthly menus and 30 day freezer menus among my circle of friends lately. We know this isn't exactly a new concept but it's one that does need a second look for many families. Let's face it, our families are getting larger again. Gone are the days of 1.5 children, two cars, a dog and two working parents. At least within the circles I follow, 3 or more children seem to be the norm, the second vehicle is a bonus and most of the time the Mom is staying at home. Stay-at-home Mom or not, these ideas are meant to save time and money. Who doesn't want that, no matter what your family looks like?<br />

My creative and ever so thrifty pals seem to enjoy getting together to make up freezer meals in a large group exchange, thus increasing the variety of meals in their freezer waiting for those quick dinners. That sounds amazing to me these days. Here is where I stumble, the idea of doing only once big monthly shopping spree has a few more downs than ups. One is for the fresh produce. Obviously that needs to be done more often and I'm sure my pals do runs for such things also. Another, is that grocery shopping is an outing for me and since our move to the great white north, it's been my ONLY outing some weeks. Flyer or sale shopping can only be done weekly, but I do wonder how much difference that might make on a monthly basis, really? So here is my compromise.<br />
<ol>
<li>Make a monthly menu plan (rather than my weekly one).</li>
<li>Shop for the month except the fresh produce so I have stock on everything else I need.</li>
<li>In that menu there will be at least one freezer meal per week that will be made on the 1st week's shop so that I get the benefit of a few meals ready to go.</li>
<li>Have 1-2 slow cooker meals. </li>
<li>I will resist the urge to seek out and buy those 50% off items that fill our remote, small town shelves daily. That will be the most tough one of all I think!</li>

INGREDIENTS:<br />
1 1/4c Quinoa, cooked and cooled<br />
1c Beans, mashed (white or chickpea)<br />
1/4c Parmesan Cheese, grated<br />
1/4c Onion, grated (or minced)<br />
2 tbsp Chickpea Flour (or coconut flour)<br />
1 tbsp Seasoning of your choice: chili powder, garlic powder, salt & pepper<br />

DIRECTIONS:<br />
Pulse (or mix by hand) beans, cheese, onion, seasonings and flour until mixed well and sticky. Mix in quinoa by hand. Form into balls and form into tots (or any shape you like really). Makes approximately 18-20.<br />

These can be baked or fried in oil or baked. If you do bake them, just very lightly coat or mist with oil first or they can seem dry. Some are Sugar-Free and Grain-Free, while others could easily be converted over. Because I often cook without measuring, some of there are estimates. I mean, really a cupped palm-full of dried herbs would be about 1 tbsp, where as a half might be a tsp for me. Best way to get cooking is through trial and error so if you're uncertain of anything, please leave me a message & hopefully I can get back to you fast enough.<br />

Beef Pot Pies</h3>
<h4>
(Makes 12 - 4" pies)</h4>
Ingredients:<br />
1 beef roast (large enough to feed a family of 6-8), cubed to small bite size pieces<br />
3 carrots, chopped to small bite size pieces<br />
4 small sweet potatoes (not yams), chopped to small bite size pieces<br />
1 cup frozen peas<br />
2 tbsp worchestershire sauce<br />
4-6 tbsp oil (I used grape seed oil)<br />
24 pie crusts (these are not SFGF, but I hope to post a recipe option soon)<br />
Seasoning for beef; I use dried thyme, garlic, onion, dry mustard, S&P<br />

Directions:<br />

Heat oil in deep pot (I used coconut oil). Cube beef, coat well with dried herbs and seasonings. Add beef to hot oil in batches just to brown (you may need to add more oil after each batch. Remove to a bowl until all beef is cooked.<br />
<br />
Turn heat down to medium. Add enough water to cover bottom of your pot. Loosen up bits from bottom of pot. Put chopped vegetables into the same pot and return the beef as well. Add with just enough water to cover vegetables. Add worchestershire sauce, cover and simmer until vegetables are tender and meat falls apart easily (I simmered for a couple hours, but one could do this part in a crock pot just the same). Add frozen peas at the end so they don't get mushy. Let cool completely to make sure it sets well. If you're mixture is too thin for you liking you can always add very small amounts of arrowroot powder (1 tsp at a time to avoid a slimy texture). Too thick, just add a bit more water.<br />
<br />
Have pie shells ready to go. Fill shells to a slightly heaping levels, top with upper crust and seal. Make sure to add steam vents. These can be wrapped in foil and frozen or cooked right away. From frozen it will take longer to cook (foil on until half way), 30-45 minutes. Fresh 15-20 minutes.<br />

If you were to ask pretty much any homeschooling mother (or even father), "What is the most often used comment when people find out you homeschool?" and they will most certainly say, "WOW, You're a busy Mom (or Dad)!" Most of the time I respond, "Well, no, not really." We might just get a bit more done in a day than most because we don't need to rush around and follow a set schedule (though we are very routined). I don't count myself busy so much as blessed to see my children learn & grow 1st hand.<br />
<br />
So here is a breakdown for those of you who wonder exactly what do we do as homeschoolers? This is just starting to include more from the 4 year old boys who will soon begin a more intentional "teaching" routine. This is a very good day. Not ALL days look like this, but if the majority could I would be joyous beyond all measure!<br />
<br />
<ul>
<li>Children <span style="color: #990000;">Wake</span> <span style="color: #666666;">7-7:30AM</span>: Owen (8) helps get the others (ages 4, 4, 2) dressed and ready for breakfast while I get my morning coffee (winter is tough on me for needing more sleep).</li>
<li><span style="color: #990000;">Breakfast</span> <span style="color: #666666;">8-8:30AM</span>: Mango, Banana, almond Milk, Vanilla Yogurt, Chia Seed Smoothie. I must say, the days we have smoothies/shakes the children are better behaved and aren't begging for more food in an hour.</li>
<li><span style="color: #990000;">Music</span> <span style="color: #666666;">8:30-9:00AM</span>: A half hour to soak, dance, sink, jump to some worship and start he day right. The days I skip this I will pay dearly with often ME having a bad attitude, but the children as well. I often pray, but it's certainly time we all do it together again (se got out of this when we moved).</li>
<li><span style="color: #990000;">Clean-Up/Set-Up</span> <span style="color: #666666;">9-9:30</span>: While I tidy up from breakfast (and sometimes the night before) the younger children can play downstairs for a while.</li>
<li><span style="color: #990000;">Bible/History & Geography</span> <span style="color: #666666;">9:30-10:00</span> (roughly): Owen does his Bible lesson or as many as he can before the next activity. Today he did Science as well (his favourite).</li>
<li><span style="color: #990000;">Art/Cooking</span> 10-10:30 (roughly): Because I have two 4 year old boys I am finding that splitting them up to trade off for two activities is best. Today I tried out having Owen lead the "craft". He chose puppets & plates today as I wasn't prepared in advance. He did a craft while I took the other one in the kitchen. We made Quinoa Tots (recipe to follow soon). After the trade, the other boy and I made tomato soup. If they finish early or before i need them, they go off to play for a while. </li>
<li><span style="color: #990000;">Language Arts/Clean-Up</span> <span style="color: #666666;">10:30-11</span>: In between helping his siblings Owen was able to get in another lesson and help tidy up for lunch. Though today he managed to finish all but his math before lunch.</li>
<li><span style="color: #990000;">Lunch</span> <span style="color: #666666;">11:30-12:00</span></li>
<li><span style="color: #990000;">Outdoor Play</span> <span style="color: #666666;">12:15-1PM</span> (if I'm lucky in the winter): Today the weather was great! They did very well, though our 2 year old just gets lost in the deep snow. So she helped to make hot chocolate after 15 minutes. The boys climb trees, hunt for our snow covered sleds or build with coloured ice blocks made from another crafts day. I might check emails, blog or prep dinner for those busy evenings.</li>
<li><span style="color: #990000;">SCHOOL</span><span style="color: #666666;">12:45-3:15PM</span>: We do have one child who is not our own and we have to put him in traditional school, so sadly he goes afternoons 3 days a week. Thankfully my husband works a job that allows him to take our boy to pre-school so we don't have to pack up everyone.</li>
<li><span style="color: #990000;">Story Time</span> <span style="color: #666666;">1-1:30PM</span>: Owen is a FABULOUS reader so often each child picks out their favourite book and they curl up on the couch for story time. Owen loves it! He like to cuddle with his siblings but they don't often let him. This way they get that closeness time in.</li>
<li><span style="color: #990000;">Nap/Quiet Time</span> <span style="color: #666666;">1:30-3:30PM</span> (or longer as is today): The "baby" goes down and the other 4 year old either plays quietly in his room or naps himself. During this time Owen finishes any other subjects not yet complete. </li>
<li><span style="color: #990000;">Science and Math</span> <span style="color: #666666;">1:30-2:00PM</span>: we have modified the math recently because it was more pages than he was able to handle in a day. The actual work wasn't too hard to understand it simply was too many pages (3-6 pages of addition & subtraction can get to be a lot). As a trade we take him shopping so he adds up our groceries as we go along and we see how close he gets at the till. Kind of fun for us both and it keeps me from buying too much!</li>
<li><span style="color: #990000;">Review/Baking</span> <span style="color: #666666;">2-3:00PM</span>: Owen loves to bake or make desserts. Today he is making layered Jell-O cups. We talk about solids, liquids & gas and how one can change to another state (also called phase transition). Science and History is something we both enjoy so i look forward to our future researching. Once that was done (or waiting for the next phase to complete) we go over his workbooks and discuss what he has learned. I ask him questions to make sure he is grasping all that he is reading and learning. Seldom do I have to correct him other than to remind him to be tidy and watch his spelling.</li>
<li><span style="color: #990000;">Free Play</span> <span style="color: #666666;">3:00-4:30PM</span>: Often a time where he can watch a program on Netflix, but once all his brothers are awake or home he is to play creatively with them until it's time to get the supper table ready.</li>

There you have it! It's really not all that complicated so long as I keep this basic routine there is actually a lot of peace in the house. If I try to do too much more or less things go a bit crazy (mostly for me I think). As you can see, my son spends only about 1-2 hours total in his workbooks (days will vary), the rest of the time is hands on learning, leading and helping. We have play dates and soon Owen will be joining the local school children for swimming lessons so we will need to adjust again, but that's a great thing about homeschooling, we can!</div>

<b>Seriously time to move my lazy butt!</b></h4>
I HATE exercising. There I said it. I love the
endorphin rush after a great workout, but I don't like to get started.
This might just be the biggest of all the challenges for me. The best
time will be in the morning, but I don't wanna!!!! Here's the best
advice I can give myself here because ultimately it's just the way it
is... SUCK IT UP! The only other option I have is to live a long winter
tired and cranky. I'm not talking about running a marathon here (besides
that isn't very healthy for a body anyway). I mean even 15-20 minutes
of burst training or "dance therapy". Just something to help wake up my
mind and body. Here are some things that have peeked my interest of late.<br />

And I can tell you, she does look great (though I think she would look great regardless). A dancer and mother of four I could see how this program might appeal to her. I have my doubts that this "menno" white girl could dance her way to fitness, but if Gwenyth uses her then it must be worth it right?<br />

These disks are expensive so... let's see what YouTube has on it first shall we? I'll tell ya, the practicing steps and warm up works for me. My biggest shortfall with this type of workout is my own perfectionism. If I can't get it perfect I usually trash the whole thing. Dancing doesn't come natural to me. Oh, by the way she's gorgeous, so just get over that part right now.<br />

Still ladies (and I mean ladies here, so guys you might wanna just skip reading this one) the best workout and the ones that are best for our mind and body should be done with our husbands, alone and uninterrupted. Sex burns like 200 calories, reduces pain, increases estrogen (for women) and reduces prostate cancer (for men obviously). Studies have shown that one "dose" of semen contains just as much vitamin C as an orange (not suggesting you drink it, our bodies can absorb it just fine the traditional way). Talk about fighting off colds this winter though. Never mind that married couples who keep up a healthy intimate life will be more relaxed and have far less incidents of depression. Watch what goes into the body</h4>
Staying away from our arch enemy
refined sugar and grains is always on the hit list around here, but
winter is certainly a critical time to stick to it. Decreasing or best
eliminating foods that your body turns to sugar and then lazy making fat
is my 1st line of defense (bread, pasta, rice to start).<br />
<br />
Increasing
good fats gives me so much more energy than anything else out there all
year round. I crave avocado like crazy when I'm deprived of energy
(it's the temptation to eat it with a huge bag of chips that takes me
out). My good fat go to list is: coconut oil, olive oil, butter, salmon,
avocado (any form) and even though it tastes like death... cod liver
oil. I have a real hard time with cod liver oil but if it means not
feeling like a hermit all winter, maybe I can suck it up or maybe I'll
keep looking on that last one.<br />

Going green has a whole new meaning </h4>

Well I tries this for a few days in a a row and I must say I was like an energizer bunny. I had to slow myself down those days. I'll try it again soon to test it out, but my stash will run out fast. If this truly gives me a kick in the butt I might wanna save it up for the days I REALLY need it.<br />

Low Iron makes me very sleepy </h4>
Having
suffered from low iron levels in the past (mostly when pregnant), I
know how tired I can get from that. Add to it low potassium or iodine
and yikes! So it looks like a rice free version of an Asian diet might
be a on the menu this winter. I used to eat sushi for my nori fix, but
the rice & lack of
availability up here sends me looking for other ideas. I might just deep
fry it in coconut oil and top my suppers or salads.<br />

An old standby for increasing my iron is grass fed beef liver. Here's my recipe. A far stretch from the liver & onions of my youth (though I liked that as well so long as it was covered in A1 Sauce). Now if liver really isn't your thing you might want to check out your local health food store and pick up some <a href="http://www.florahealth.com/product_conditions.cfm?conditions_id=15&prod_id=88" target="_blank">Floravit</a>. It's a liquid iron supplement that actually tastes good. In the meantime I will keep looking for more yummy recipes to help battle these winter greys, so keep posted.<br />

Beef Liver and Onions </h3>

Ingredients</h4>
small amount (2 servings) grass fed beef liver<br />
1 yellow onion, sliced<br />
2 cloves garlic, minced <br />
10 mushrooms, sliced<br />
6 slices bacon, sliced (watch for nitrates, they are bad for you)<br />
coconut flour (enough for coating)<br />
arrowroot powder (maybe a tsp or so)<br />
thyme (to your taste, but I like a lot 1 tbsp)<br />
salt and pepper to taste<br />
kale or other dark leafy green for serving with it<br />

Directions </h4>
Cook bacon with sliced mushrooms, onions and garlic. Slice up the liver into strips, coat it with coconut flour seasoned with salt, pepper and thyme (if you have a bit of arrowroot powder great because then you get a bit of "gravy" with the pan drippings). Remove bacon mixture from pan and set aside.<br />

Add a bit more coconut oil to the pan and cook the liver (not to death or it gets too tough). Gently brown it on all sides (a couple minutes). Return the bacon, onion & mushroom mixture to the pan and loosen up the pan bits with a bit of water (about 1/4 cup for a small liver amount). Sometimes I add a bit more thyme to amp up the flavor (I love mushrooms with thyme).<br />

Let it cook for a couple minutes longer with the lid on. I serve it over baby kale or add kale to the last cooking stage to wilt it up a bit. Add there you go. Enough iron to get you through the month. Only something I make a few times a year, but it's so good (when done right).
